Fenjiu Sensory Evaluation

Fenjiu’s sensory evaluation begins with the observation of its colour, which is followed by the observation of the spirit’s aroma, and then of its taste. Through careful observation of the alcohol’s colour, aroma and taste, the spirit’s style can be determined.


Step 1 of the Sensory Evaluation: Observe

First, look at the colour of Fenjiu. It is transparent and colourless, clear with no sediment.


Step 2 of the Sensory Evaluation: Smell

Place the glass under your nose 1-3cm away. Move it slightly to increase the aroma. Take a deep breath. As the fragrance travels through your chest, imagine the morning sunrise shining through the dew, falling from the leaves into the river stream.

During the smelling process, pay attention to the following:

(1) The distance between the nose and the glass should be level with one another (usually in the range of 1 to 3cm).

(2) The glass should only be inhaled from, it should not be exhaled into.

(3) The level of inhalation should be consistent - do not inhale in moderation or in excess - find a good balance.

(4) Fenjiu can be swirled lightly in the glass to increase the intensity of its aroma.


Step 3 of the Sensory Evaluation: Taste

Take a small sip and let it travel through your tongue and warm up your palate. Taste the sweetness, mellowness and the full body of Fenjiu. Appreciate the flavour as the aroma comes through your nose.


Step 4 of the Sensory Evaluation: Discover

Take the second sip and let it build on top of your first sip. Discover the distinct layer from each sip and various flavours coming back through your nose, just like perfume.
